Pumpkin Soup |

Well you need
Pumpkin quite a bit
Sweet potatoes the orange one
Parsnip
A 500g pkt of bacon I always go for a smoked one if its around
A few heads of garlic chopped up
A couple of onions cut up small
2-3 cups of vege stock I just mix up the powder stuff!
If you like
a few chilli flakes
cream to add at the end before you serve
method
in a big pot put a few table spoons of oil
add chopped bacon onion and garlic
let this cook for a bit so the onion is soft and bacon is a bit cooked but not
to crispy this brings out the flavor
add stock
add chopped up veges
leave this to simmer for a couple of hours
remove from the stove and put mixture through a blender or use a hand held
blender in the pot.
The thickness of the soup depends on how thick you like it. I like mine pureed
so it is smooth but I don�t like it to watery so I make sure I have plenty of
veges and the stock when it is added just covers the veges.
If you like a bit of spice add the chilie flakes at the end before you use the
blender
Also if you are heating it and then serving it a nice alternative is to add a
couple of table spoons of cream to it and stir this through. mmm creamy pumpkin
soup. Just make sure the soup hasn�t boiled before you add the cream or after
wards as it will then curdle and not look so nice.
